Quick Food!


I know I confessed this before, but I don’t cook.  That doesn’t mean that I can’t appreciate good food.  I’m constantly looking at magazines, recipe books and the internet for quick (sometimes health) meals.  Sometimes, you just have to make something quick, so I decided to share some of our quick foods and some that I would love to try…

  1. Breakfast for dinner – This is one of our family favorites! Scramble up some eggs and make up a batch of fluffy pancakes and you’re set!
  2. Nachos – I can have nachos everyday.  Corn chips, black beans and cheese – easy!
  3. Stir fry with brown rice – We normally make a huge amount of rice and use it for different things during different meals.
  4. Grilled cheese sandwiches – one of our family favorites.

I think the hardest part for me is to try to find that balance between quick and healthy…

    Often when I make salad, I will chop up lots of ingredients at one time. That way I can have salad for a few days by simply adding lettuce!
